Scotch Fish grated potato and egg
A popular kid’s meal across many generations.
This a fifth generation loved family food heirloom. OK they did not have microwaves in ancient times and we gave up deep frying, but otherwise it is the same family recipe, excepting also that the family name went from ‘Mock Fish’ to the more genteel ‘Scotch Fish’ in the 1950s.
Preparation time 15 minutes
Cooking time for three batches, 18 minutes
3 medium potatoes
3 tablespoons of fine chopped onion
½ teaspoon salt
pepper to taste
peel the potatoes
microwave on high for 3 minutes
grate potatoes into a bowl
add 3 eggs
add chopped onion
heat nonstick pan
add a few drops of cooking oil to pan
measure out three amounts in ladle and put in pan
flatten to 15mm
cook on both sides until brown (taking about 6 minutes total)
serve hot with tomato sauce
Leftovers can be put in tomorrow’s lunchbox but the chooks will be grateful too.
